Meal in Minutes
Minutes — not a number in a red starburst. The method is the promise: add water, let it rest while you set out the plates, cook. That rest is the only waiting left in the whole business, and it is measured in the time it takes to put the kettle on. Not hours. Never overnight.
What has been taken out is worth naming, because each of the three was costing you something different. Soaking cost you the night before — the reminder at ten o'clock, the bowl on the counter, the morning you remembered too late. Grinding and fermenting cost you the equipment and the judgement; knowing when a batter is right is a real skill, and it takes years and a particular kitchen to acquire. Chopping cost you the fifteen minutes nobody ever budgets for — the board, the knife, the onion. Fudbee removes all three from the morning and leaves alone the one part that was never the problem: the cooking itself.
It is a meal, not a snack. That distinction matters on a shelf crowded with things that fill a gap. A plate of idlis with chutney is breakfast; three biscuits with tea is a postponement. Every pack here makes enough for a table — 250 g for a weekday, 400 g when the house is full — and every one arrives with the vegetables and the seasoning already inside. That is the difference between a mix and a meal.
And it is not only morning. Upma is a perfectly good eight o'clock dinner. Rava dosa is what you make when someone turns up unannounced. Akki roti is the answer to a Sunday evening when nobody wants to cook and everybody wants to eat. The name says minutes, not mornings — the range belongs anywhere in the day where there is hunger, a stove, and not enough time.
What you are not being asked to give up. You still pour the batter. You still watch the edges. You still decide when it is done, because you always could. Fudbee does not cook the meal for you — it gets you to the stove eight hours earlier than the recipe used to allow. Everything after that is still yours. Which is precisely why what comes off the tawa tastes like it came off your tawa.
